But isn't the point with that one that you get different textures at the same time? I mean, I don't get why anyone would ever have anything other than spaghetti, but I don't think the edges of farfalle are *supposed* to be al dente...

Exactly! Chewy inside, soft outside. Part of the appeal of farfalle is that you get twice the texture in one pasta.

This led me down a rabbithole in which I learnt that:

a) Americans call ‘fusilli’ ‘rotini’, for some reason.

b) Americans therefore invent the idea that ‘fusilli’ and ‘rotini’ have some subtle difference, which they repeatedly and nonsensically try to explain by contrasting ‘coiled spring’ with ‘helix’ or talking about ‘tighter spirals’ while showing photos that show nothing of the sort.

c) They even double down by claiming that one comes from North Italy and the other from the South, but nobody in Italy (or anywhere outside America) knows what they are talking about.

d) Sometimes they find images of really weird long pasta, and claim that’s what fusilli is.

The internet is full of AI pages explaining the nonsensical ‘subtle difference’ between rotini and fusilli, and suggesting that it’s a matter for true pasta experts.
