Didn't even realize these existed. Do you just run an emulator on it and play games that way, or is there some magic that they're doing to make it compatible with the original games for those handhelds?

I poked around; they're running a fork of SteamOS.

Basically for these you can go Linux or Android. Both have emulation, and Steam streaming app options but with Linux, you can also get certain Portmaster-compatible Steam games, e.g. Undertale and Stardew. Been playing a bunch of Zelda fan games actually!
