Whaaat why would you think those would be interchangeable

Apparently it's a common suggestion. Still makes no sense. Oil is oil. Applesauce is... not.

Oh, I used to do that substitution a lot in baked goods! I think it's because oil (and eggs) are just used for moisture and binding in a lot of baked goods, so a thick fruit puree like applesauce works as a substitute. Yogurt works well too.

Doesn't work for everything, though. It usually makes the dish kind of heavy, so I don't think it would turn out too well in, like, a dutch baby or a popover. It's perfectly fine for something simple like cake mix cakes for breakfast, though.
