I picked it up because my mother's friend grows it and apparently swears by its nutritional benefits, but when I got home with my little bundle of fresh green leaves, I suddenly realized that the recipes I had for it called for fish mint roots. So I turned to my trusty friend, Google. Apparently no one in the West knows what the hell a 'fish mint' is. I tried a different language, but I got about ten different ways to cook the roots and one sad-looking recipe for salad that I disregarded because I have an irrational grudge against raw leafy vegetables.
In the end, I decided that I've yet to meet a vegetable I can't stir-fry and this was no exception. It's definitely too strong of a flavor to serve alone, though; I had it with mushrooms and rice and the flavor really overpowered them both. Probably would do better with something acidic, like a tomato, or as a garnish in something more flavorful.
In other news, I bought water spinach because I thought it was a 'new' vegetable. Turns out I've eaten a lot of it but never saw it uncooked. I am, quite frankly, not very smart.
